1. DIY: Earrings

    Because my sister loves me, she arranged for us to attend a jewelry making class while I was in Charlotte for the weekend.  We went to Beadlush and spent a few hours making some super fun “swing time” earrings.

    I deviated slightly from their standard earring kit and choose some smaller orange and turqoise beads to work with.

    I’m excited to wear these in Maui in a few weeks!

    We learned how to make a wrapped loop, which is apparently the most versatile technique in jewelry making.  

    Jennie finished her first kit so fast she made a second pair similar to mine.

    I had a wonderful time and left with my own full set of jewelry making tools (for future DIY projects, of course).  If you’re in Charlotte with a few free hours, I highly recommend checking out one of Beadlush’s many craft classes (ask for Vanessa)!

  3. Craft Club: DIY Terrariums

    For Craft Club this month, we made terrariums!  And I can’t say we didn’t choose this project out of sheer spite.  Recently, Gilt City sold terrariums from Botany Factory for between $300-$650 and we were confident we could make our own for a fraction of the price.  Sure, ours may not be as “hip,” but we sure up-cycled the crap out of our old vases!  

    Our host read up on how to assemble these puppies (here) and was kind enough to share several of the unique plants she picked up from Flora Grubb.  I also brought the succulents I picked up from the Treasure Island Flea Market.

    I may be biased, but I think our finished products turned out pretty great.

  4. Recipe: Oreo Cupcakes

    It’s been a while, I know.  I missed you too.  I was in D.C. for a conference and then swung by North Carolina to see my sister and her family, which of course included quality time with my incredibly adorable niece, Charlotte.  [Yes, that’s right, she’s Charlotte from Charlotte, NC.]  

    Over Christmas vacation this year, Charlotte and I spent many afternoons baking cookies and much to my delight during this visit, when I asked her what her favorite kind of cookie was, she answered “Auntie Julie’s.”  You gotta love this kid.  

    This trip, I decided to mix it up a bit (pun intended) and try this oreo cupcake recipe (from Pinterest of course).  

    The one thing I’ll do differently next time I make these is use the plain cookie half for the bottom of the cupcake.  I found that the white filling caused the bottom of the cupcake to be a little too greasy for my taste.   

    But that didn’t stop me from powering down two of these bad boys right after they were frosted.  

    Charlotte had fun frosting the cupcakes until she realized that the sooner she finished, the sooner she could eat one.

    She’s definitely got the Wong family sweet tooth.

  5. Recipe: Stuffed Bell Peppers

    I had never made stuffed bell peppers before I did tried to do the AdvoCare cleanse in January.  It’s now become one of my favorite meals to make.  Here is my version:

    Stuffed Bell Peppers
    4 bell peppers
    2 tomatoes (any kind, cherry tomatoes work well too)
    1 onion 
    4 cloves of garlic
    1 Tbs of olive oil
    1 pd of ground beef (or ground turkey) [Normally I use Trader Joe’s beef-less ground beef because my boyfriend is vegetarian.  But, since I’m Paleo-ing and meat substitute products are not allowed, we made half real meat and half fake meat this time.]
    1/2-3/4 cup of canned tomato pasta sauce (you can substitute tomato juice too, but seriously, who drinks tomato juice.  Am I right?)
    Salt, Pepper, Cayenne, Oregano (and any other Italian spices you have handy) to taste.
    1 cup (or more) of shredded mozzarella (or whatever other delicious cheese you have in your fridge). 

     

    Preheat your oven at 400 degrees.  Start boiling a large pot of water.  Saute the diced onions until soft.  Then add in the minced garlic.

    Once the garlic gets soft, add in the ground beef and tomato sauce.  Break up the ground beef (or meat substitute) and cook thoroughly on med-high heat.  [When using a meat substitute, cook it on lower heat because it dries out quickly.]

    One of the above pictures is the fake meat and the other is the real meat.  Can you guess which one is which?

    Stir in the chopped tomatoes and all of your spices after the meat is almost done cooking.  Cover and simmer on low heat.

    Next, add your bell pepper shells to the pot of boiling water.  [Use a small paring knife to cut around the stem to get out most of the seeds.  I just use my hands to get out the rest of the white/fleshy seed stuff to get a clean shell.]  

    Remove after about 4-5 minutes.  Transfer to a wire rack and let them cool for a minute or so.

    And here’s where it gets crazy.  Generously sprinkle coat the bottom of the bell pepper with cheese BEFORE you begin to stuff it with the ground beef mixture.  Then after you’re done piling in the yummy filling, add MORE shredded cheese to the top.  I really pack it in so that you get a solid layer of cheese on top.  Bake for 15 minutes.  [Don’t forget to turn off your stove - I didn’t even realize mine was still on the other night because you could barely see the flame since it was on so low during the simmering stage.  Luckily my boyfriend has a keen eye.  Good thing I have renter’s insurance for the times he’s not around.]

    Of course, since I’m Paleo-ing, no cheese for me.  But, the bell peppers are still delicious even without it.  They also reheat really well, so don’t worry about making too many!

    I’ve been dreaming of cheese and grains, especially these jalapeno cheddar scones I made pre-Paleo diet.

    Baked hard-boiled eggs are all the rage on Pinterest.  30 minutes at 325 degrees.  Chill and peel in a bowl of ice water.

    2 bunches at Whole Foods for $12.00.  I split them between various vases and set aside some as a hostess gift on Easter.

    I’m loving my new berry-dedicated ceramic basket from Sur la Table.  Makes eating fruit so much cuter.

  7. Weight Loss: Trying the Paleo Diet

    I’ve realized that the reason I love to try new diets is because of the guilt-free eating that occurs the few days before.  At least that’s how I rationalized “more cheese” to myself and my Olive Garden waitress this past Saturday.  I might have also yelled out “no carb left behind” while reaching over to finish the last of my boyfriend’s baked ziti as the waitress starting clearing our table.  But, I digress.

    Inspired by two of my friends in Raleigh, I started the Paleo diet this week.  Essentially, this is a healthier version of Atkins.  You are allowed to eat non-starchy vegetables, fruit, nuts, and lean proteins.  What you are not supposed to eat are grains, dairy, and beans.

    I loaded up at Trader Joe’s over the weekend and have planned out my meals for the week.  I’m going to try this diet for 5 days.  This might actually be an over ambitious goal since the last time I tried a 10-day cleanse, I only made it to day 4. Also, one time, in college I tried the Hollywood Diet (where you only drink this juice for 48 hours) and I made it to 2:00 p.m., … the first day.   

    Anyway, stay tuned to see if I have any actual will power.

    I’m also pumped that he introduced me to Marie Moreshead.  She just released a new EP called “Topanga Sessions” and I’ve had it on repeat all weekend.  She’s got this delightfully haunting voice and, if you like acoustic guitar, I have a feeling you’re going to want to download the entire EP (here).  

    As soon as I heard this track, Ahyoko’s Song, I knew it would be on the playlist for our Maui trip in May!  I can just see us laying on the beach listening to this song now.  

  9. Baby Photo Shoot: Zachary Kingston White

    My boyfriend and I were honored when our good friends asked us to take pictures of their baby for the birth announcement.  Since neither of us have ever photographed a baby before, I immediately took to Pinterest for inspiration.  I had banners, buckets, paper crowns, clothes pins, wardrobe changes, and fake glasses all at the ready.  But, after a solid morning of baby torture, let me tell you, I have NO idea how these professional photographers get babies to do any of the things they do in those pictures.  Luckily, my very talented boyfriend was still able to get these awesome shots of ZKW.  Then again, this kid can’t take a bad picture.

  10. Recipe: Judgment-Free Berry Scones

    My morning coffee order for the last few weeks has been: a small drip coffee in a medium cup (thereby leaving extra room for milk without having to sacrifice any of my overpriced coffee) and two mini lemon currant scones.  This is a seemly reasonable order until the folks at Peet’s shame me by putting my scones into two separate bags.  As if to say, “these two scones can’t possibly both be for you?!”  

    Well this weekend, I decided that I would no longer subject myself to such cruel judgment by these baristas and made my own scones.  

    Unlike other baked goods, you can make scones as soon as you decide you want to because the recipe calls for cold butter and cold eggs.

    I used a dried berry medley from Trader Joe’s with strawberries, cherries, and blueberries.

    For the glaze, I used 3/4 cup of powdered sugar, 1.5 tablespoons of lemon juice, and 1 tablespoon of room temperature butter.  Whisk it together and spread over the finished warm scones.
